According to ABC TV on October 3, the first whiskey production is underway at a whiskey distillery built by an Osaka-based company in Yabu City, Hyogo Prefecture. Because Yabu City has an abundance of clean natural water and the temperature differences necessary for the aging of whiskey, “With One,” an Osaka City company engaged in the sale of alcoholic beverages, opened the Yabu Distillery in July this year. On a vast site of approximately 8,000 square meters, there is a building for distilling whiskey and two storage buildings for the barrels in which the whiskey is aged. Currently, the fermented wort is distilled to produce “base spirit,” which is still clear in color. After three years in the barrels, it turns a beautiful amber color and has a rich flavor that is unique to whiskey. (In recent years, Japanese whiskey has been gaining popularity overseas, and the company plans to sell 60% of its production in Europe, North America, and Asia in the future.
